Proyart prefers to source most of his ingredients from the cold and fresh waters of Norway, ensuring all dishes served at One-O-One are of the highest quality imaginable. House specialities worth trying include the tuna tartare with soft shell crab tempura and wasabi sorbet, the king crab and roast Anjou pigeon with shallot confit, the scallops with truffled potato and mousseline and, for dessert, the caramelised apple with popcorn and calvados.
