First off, the rice. You can't have good sushi without good rice. The rice here is technically one of the best, compacted perfectly; warm, soft and moist in equal measure. Then, the fish - supplied by Atari-Ya, of the highest quality outside of Japan. If you're just after high-quality fish, then stick to one of the Atari-Ya outlets. However, Yashin represents a cut above even from an already-high benchmark. Diners get to watch their chefs in action from the counter, using novel techniques like blowtorching to give meat a smoky, caramelised flavour, platters of food prepared consecutively to allow everything to be served at the perfect temperature. Interesting and innovative combinations are presented, and it represents a quality to rivalled only by Sushi of Shiori across town.
It ain't cheap - when you put together 'sushi', 'customised', 'luxury' and 'Kensington' in the same sentence, you're not going to be paying pennies. But for the zenith of the sushi experience as it stands, right now in London, you really can't do much better than this.
